Putting potato chips in a sandwich, we’d heard of. But until the All Star Sandwich Bar came along and demonstrated what it means to really experiment with the medium, we hadn’t considered the gastronomical potential of, say, adding banana-guava jam and watercress to the common turkey melt. That’s the kind of inscrutable, ultimately pleasing combination that shows up in the seven daily specials concocted by Chris Schlesinger and partner Jim Economides, who do an equally bang-up job with stalwarts like the BLT, the Reuben, and beef on weck.
